Big Mac spaghetti squash - Don't knock it till you try it!

Listen, I know the mere mention of a big mac spaghetti squash might make you raise an eyebrow or two. But trust me, don't knock it till you try it. Spaghetti squash is not only a tasty alternative to traditional pasta, but it's also high in fiber. This makes it a great low calorie and low-carb option for those looking to maintain a healthy diet. So instead of reaching for the bun, why not give this versatile squash a chance and create a homemade big mac on top? You might just be pleasantly surprised by the delicious combination.


Ingredients:

-1 large spaghetti squash

- 1 lb ground beef

- 1 onion, diced

- 1/4 cup ketchup

- 2 tablespoons yellow mustard

- 2 tablespoons apple cider vinegar

- 1 tablespoon brown sugar

- 1 teaspoon paprika

- 1 teaspoon onion powder

- 1 teaspoon garlic powder

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1 cup shredded cheddar cheese

- 1/4 cup pickles, diced

- Sesame seeds, for garnish (optional)

Instructions:

1. Preheat your oven to 400°F. Line a baking dish with parchment paper.

2. Cut the spaghetti squash in half and remove the seeds with a spoon. Place the halves in the baking dish with the cut side facing down.

3. Bake the squash for approximately 40-45 minutes until it is soft and easily pierced with a fork. Once done, remove it from the oven and let it cool for a few minutes.

4. In the meantime, heat a large skillet over medium heat. Add the ground beef and cook until it is browned and fully cooked.

5. Add the diced onion to the skillet with the beef. Cook for an additional 2-3 minutes until the onions are translucent.

6. In a small bowl, mix together the ketchup, yellow mustard, apple cider vinegar, brown sugar, paprika, onion powder, garlic powder, salt, and black pepper. Pour this mixture into the skillet with the beef and stir to combine. Let the sauce simmer for 5 minutes.

7. Add your "big mac" mixture to your spaghetti squash and top it with shredded cheddar cheese, diced pickles and extra onions.

9. Place the dish back in the oven for about 10 minutes until the cheese is melted and bubbly.

10. Optional: sprinkle lettuce and sesame seeds on top for a true Big Mac flavor.
