A Step-by-Step Guide to Perfect Cast Iron Corn Fritters

Ingredients:

- 1 cup all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 2 large eggs

- 1/4 cup milk

- 3 cups fresh or frozen corn kernels

- 1/2 cup finely chopped green onions

- 1/2 cup finely chopped red bell pepper

- 1/2 cup shredded cheddar cheese

- Vegetable oil for frying

Instructions:

1. In a large bowl, whisk together the flour, baking powder, salt, and black pepper.

2. In a separate bowl, beat the eggs and milk together. Then, stir in the corn, green onions, red bell pepper, and cheddar cheese.

3. Add the wet ingredients to the dry ingredients and stir until just combined. The batter should be thick and lumpy.

4. In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.

5. Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening slightly with the back of the spoon.

6. Cook the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.

7. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.

8. Serve the corn fritters warm, with a side of sour cream, salsa, or your favorite dipping sauce.
