How to Make a Delicious and Healthy Crispy Tortilla Breakfast Pizza: Low Carb and Keto Friendly

This healthy "breakfast pizza" is one of my favorite quick and easy recipes and it only takes 20 minutes in the oven! The egg is runny and the vegetables are crisp and flavorful. What more could you want? Serve with your favorite hot sauce or my personal favorite with eggs, ketchup!


Ingredients

1 large tortilla (burrito size) - I also use low carb tortillas which make this recipe keto friendly

4 large eggs

1/2 cup of your favorite protein ( I used turkey sausage links)

1/2 cup of sliced white mushrooms

1/2 cup of diced asparagus

1 tsp diced green onions

1/3 cup of mozzarella cheese

1 tsp grated parmesan cheese

1 tsp onion powder

salt to taste


**Note: You can choose any veggies you like for this recipe!


Instructions:

  1. Preheat the oven to 350 F

  2. While the oven is heating up grab your tortilla and place in a shallow pie dish then crack your eggs into the tortilla ( do not scramble the eggs)

  3. Add in your onion powder, salt, veggies and protein then top with the mozzarella cheese

  4. Bake for 20-25 minutes until eggs are done and cheese is melted

  5. Top with grated parmesan cheese and fresh green onions
