Lets admit there's very few of us that don't like bacon! We love using this jam on toast, sandwiches, burgers, or as a condiment for any dish that needs a touch of sweetness and smokiness!
Ingredients:
- 1 pound of bacon, chopped into small pieces
- 1 red onion, diced
- 1/4 cup of brown sugar
- 1/4 cup of balsamic vinegar
- 1/4 cup of water
- Mason jar for storage
Instructions:
1. In a large skillet, cook the chopped bacon over medium heat until it becomes crispy. This will take around 10-12 minutes.
2. Use a slotted spoon to remove the bacon from the skillet and onto a paper towel-lined plate. Leave the bacon grease in the skillet.
3. In the same skillet, add the diced onion to the bacon grease and cook over medium heat until it becomes soft and translucent. This will take around 5 minutes.
4. Add the cooked bacon back to the skillet with the onions. Mix well.
5. Sprinkle the brown sugar over the bacon and onion mixture and stir until the sugar has fully coated the ingredients.
6. Pour in the balsamic vinegar and water and stir everything together.
7. Reduce the heat to low and let the mixture simmer for 15 minutes. Stir occasionally so it does not stick to the bottom of the skillet.
8. After 15 minutes, the mixture should start to thicken and become jam-like. If it is still too runny, continue to simmer for a few more minutes until it reaches the desired consistency.
9. Once the bacon jam is done, turn off the heat and let it cool for a few minutes.
10. Carefully transfer the bacon jam to a clean Mason jar. Use a ladle or spoon to fill the jar, leaving about 1/2 inch of space at the top.
11. Let the bacon jam cool completely before sealing the jar with a tight-fitting lid.
12. Store the bacon jam in the fridge for up to 2 weeks. It can also be frozen for longer storage.
