Ingredients:
- 1 lb beef (flank steak or ribeye), thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 tablespoon gochujang (Korean chili paste)
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon vegetable oil
- 8 corn or flour tortillas
- 1/4 cup thinly sliced green onions
- 1/4 cup chopped cilantro
*Sliced red onions
*Sliced cucumbers
Instructions:
1. In a bowl, combine soy sauce, sesame oil, honey, gochujang, garlic, and ginger. Mix well to make a marinade.
2. Place the thinly sliced beef in a shallow dish and pour the marinade over it. Toss to coat the beef evenly. Let it marinate for at least 30 minutes, or refrigerate overnight for more flavor.
3. Heat the vegetable oil in a skillet over medium-high heat. Add the marinated beef and cook for about 3-4 minutes per side, or until cooked to your desired level of doneness. Remove from heat and set aside.
4. Warm the tortillas in a dry skillet or microwave until soft and pliable.
5. To assemble the tacos, top with a few slices of cooked beef.
6. Sprinkle sliced green onions, red onions, cucumbers and chopped cilantro over the beef.
7. Serve the Korean beef tacos immediately and enjoy!
Note: You can customize the toppings according to your preference. Some popular additions include sliced avocado, sour cream, or a drizzle of Sriracha sauce for extra heat.
