Mexican Street Corn Jalapenos

I absolutely love the combination of traditional Mexican street corn flavors with the added kick of jalapeños. As someone who enjoys a little heat in my food, these stuffed peppers are the perfect treat for me. They are perfect for summer barbecues, but honestly, I would enjoy them at any gathering. The best part about this recipe is that you can add your own twist by incorporating additional ingredients or keep it simple for a quick and easy appetizer. Trust me, these jalapeños will be a hit with everyone.


Ingredients:

-3-4 fresh jalapenos

-4 oz of cream cheese

-1/3 cup of frozen corn

-1 teaspoon of onion powder

-1/3 cup of cotija cheese

-4 oz can of green chilies

-1 tablespoon of red pepper flakes

-Salt to taste

-Cilantro for garnish


Instructions:

-Before you start, make sure to preheat your oven or air fryer to 375°F.

1. Begin by slicing your jalapenos lengthwise and scoop out any seeds.

2. In a bowl mix together all of your ingredients besides the cilantro.

3. Fill each pepper carefully, then transfer them to a baking sheet or the air fryer basket. 4. Bake or air fry for 10-15 minutes until the tops turn golden brown .

5. Sprinkle additional cotija cheese and cilantro on top. Enjoy!
