Ingredients:
- 1 pound of ground beef
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cans of enchilada sauce
- 1/4 cup of queso dip
*2 cans of green chilies ( if you don't like the taste you can leave this out)
- 3 green onions, thinly sliced
- 1 cup of shredded cheese (cheddar or Mexican cheese blend)
- 7-8 flour tortillas
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F
2. In a large skillet, cook the ground beef over medium-high heat, breaking it up into small pieces as it cooks.
3. Once the beef is browned and cooked through, add in the diced onion , green chilies and minced garlic. Cook for an additional 2-3 minutes until the onion is soft.
4. Pour the can of enchilada sauce into the skillet with the beef mixture and stir to combine. Let it simmer for about 5 minutes to allow the flavors to come together.
5. Take a flour tortilla and spoon a generous amount of the beef mixture onto the center of the tortilla. Sprinkle some green onions on top of the beef.
6. Roll up the tortilla, tucking in the sides as you go, and place it seam side down in a 9x13 inch baking dish. Repeat with the remaining tortillas and beef mixture.
7. Once all the tortillas are filled and in the dish, drizzle the queso dip and remaining enchilada sauce over the top of the enchiladas.
8. Sprinkle the shredded cheese over the top of the enchiladas and then add some more green onions for garnish.
9. Cover the dish with foil and bake for 20 minutes.
10. Remove the foil and continue to bake for an additional 10 minutes until the cheese is melted and bubbly
