Ingredients
-4 pounds of boneless skinless chicken breasts or tenders
-2 tablespoons olive oil
-2 tablespoons of cayenne
-2 tablespoons of onion powder and garlic powder
-Salt to taste
**Wooden skewers ( soak 30 min in water before assembling your chicken as this prevents the skewers from burning)
Spicy garlic parmesan butter:
-1 stick softened unsalted butter
-1 tablespoon chopped parsley
-1 tablespoon roasted garlic paste or minced garlic
-1/4 cup grated Parmesan Cheese
-3 tablespoons of hot sauce ( whatever heat level you like)
-1 teaspoon kosher salt
-1 teaspoon black pepper
Instructions:
1. Cut chicken into 1 inch pieces. Place into a bowl and drizzle on olive oil and the rest of the seasonings
2. Skewer chicken onto wooden skewers and set aside.
3. Make spicy garlic parmesan butter by combining all the ingredients together in a bowl and placing it in the microwave for 20-30 seconds just so the butter softens.
4.Heat your air fyer to 400° ( if you don't have an air fryer, the oven works great too at the same temperature)
5. Brush on the garlic parmesean butter to your skewers ( save a 1/3 of it for brushing on during the cooking process)
6. Place on whatever baking sheet you have and into the airfryer or oven for 10 minutes, then remove them and brush on another layer of your reserved garlic parmesean sauce
7. Stick back in the oven/airfryer for an additional 5 minutes
8. Take out and brush on one last layer of your mixture and stick back in for another 5 minutes with the grand total of being about 20 minutes
9. Remove and garnish with fresh parsley
**I served my skewers with rice on the side and " Bang Bang" sauce from Aldi. You can serve this with any dipping sauce you like!
