It's no secret that life can get busy, and sometimes all we want is a good comfort food dish to satisfy our cravings and keep us going. That's why I absolutely love this quick recipe. Not only does it fulfill all those carb cravings, but it's also packed with healthy ingredients like fresh and canned tomatoes, arugula, and calcium-rich mozzarella cheese. Plus, did you know that tomatoes are great for your heart? And the best part? This recipe uses pre-made dough, making it even easier to whip up when our lives are hectic. So go ahead and indulge in this delicious and healthy meal without any guilt or added stress.
Ingredients:
Fresh or store bought pizza dough
Fresh mozzarella cheese
1 cup of arugula
1/3 cup of basil chopped
1 fresh heirloom tomato sliced ( regular tomatoes work just fine too) this just gives the pizza a little more color!
1 can of whole peeled tomatoes
Garlic powder to taste
Pinch of salt
Red pepper flakes ( only if you like a hint of heat)
Instructions:
1. Preheat your oven to 425 degrees.
2. Prepare your dough according to the package instructions. If using pre-made dough, let it sit at room temperature for about 15 minutes before rolling it out.
3. On a floured surface, roll out the dough to your desired thickness.
4. Place the rolled-out dough on a baking sheet or pizza pan.
5. In a small bowl, mix together 1 can of crushed tomatoes, a pinch of garlic powder, red pepper flakes, and a drizzle of olive oil. This will be your pizza sauce.
6. Spread the sauce on the dough, leaving about 1 inch of dough around the edges for the crust.
7. Slice the fresh mozzarella and arrange it on top of the sauce.
8. Slice the heirloom tomato and place the slices on top of the cheese.
9. Sprinkle some salt and pepper on top of the pizza.
10. Place the pizza in the oven and bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
11. While the pizza is baking, wash and dry a handful of arugula and chiffonade some fresh basil.
12. Once the pizza is done, remove it from the oven and let it cool for a few minutes.
13. Top the pizza with the arugula and basil - you can even add some grated parmesan cheese for an extra kick
