Ingredients: ( Makes one panini)
- 3 -4 slices of roast beef, thinly sliced
- 2 slices whole grain bread
- 1 large red bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 1 cup of arugula
- 2 slices Havarti cheese
- 4 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F
2. In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add the sliced onions and peppers to the pan and sauté until they start to caramelize, about 10 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
3. Place the sliced roast beef on a baking sheet lined with parchment paper. Drizzle with the remaining 2 tbsp of olive oil and season with salt and pepper. Bake in the oven for 8-10 minutes, until heated through.
4. While the beef is heating, assemble the sandwiches. Take 2 slices of whole grain bread and place a slice of Havarti cheese on each one. Place the bread on a baking sheet and broil for 2-3 minutes until the cheese is melted.
5. Add a few slices of the warm roast beef on top of the melted cheese. Then top with the sautéed onions and peppers. Add a handful of arugula on top, followed by another slice of Havarti cheese.
6. Place the sandwiches back under the broiler for another 2-3 minutes until the cheese is melted and the bread is toasty.
7. Take the sandwiches out of the oven and let them cool for a minute. This will help the cheese to set and prevent it from sliding off the sandwich.
8. Serve hot and enjoy your delicious sandwich with a side of chips or a fresh salad.
