Sun dried tomatoes in the air fryer- a fun way to use your tomatoes from the garden.


If you're like me, you love spending time in your garden and watching your plants grow. And if you're growing tomatoes, you know that sometimes they can be incredibly abundant. But instead of letting those extra tomatoes go to waste, why not try making your own sun dried tomatoes? Not only is it a fun and satisfying activity, but the end result is a versatile and delicious ingredient that can be used in all sorts of dishes. From pastas to sandwiches to even breakfast dishes, these sun dried tomatoes add a burst of flavor and enhance any dish they are added to. And with just a few simple ingredients, you can easily make a batch to enjoy all year round. So don't let those excess tomatoes from your garden go to waste, turn them into something delicious and enjoy the fruits of your labor in a whole new way.




Ingredients:

-2 cups of cherry or grape tomatoes halved

-1 cup of olive oil

-Salt for taste

-Parchment paper



Instructions:

1. Wash the cherry or grape tomatoes and cut them in half.

2. Toss the tomato halves in olive oil, salt, and herbs (such as oregano or basil).

3. Preheat the air fryer to 245°F.

4. Lay a piece of parchment paper on the bottom of your basket and then place the seasoned tomato halves in the air fryer basket in a single layer, skin side down.

5. Air fry the tomatoes for about 30 minutes, checking on them periodically to ensure they are drying evenly. Pull the tomatoes out and smash them down lightly with a fork and put them back in for another 15-20 minutes.

6. Once the tomatoes are dried to your desired consistency, remove them from the air fryer.

7. Let the sun-dried tomatoes cool then add them to the mason jar with olive oil and salt.

Store in your fridge for up to a month!
