Ingredients:

- 4 medium sweet potatoes

3. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.

4. Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir well and simmer for 5-10 minutes.

5. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.

6. Slice each sweet potato lengthwise and fluff the insides with a fork.

7. Spoon the taco meat mixture over each sweet potato.

8. Top with shredded cheese and any other desired toppings.

9. Place the stuffed sweet potatoes back in the oven for a few minutes to melt the cheese.
