As we return to our daily routines after the holidays, many of us experience a lack of energy. To combat this, I recommend trying my healthy, low-calorie ground turkey zucchini pasta! Zucchini is packed with fiber, lower in calories and when cooked just right you'll be amazed at how it rivals high carb noodles. Plus, you'll get a boost of protein from the turkey burger, which is a leaner alternative to regular ground beef!
Ingredients:
2 medium zucchinis, spiralized
1 lb ground turkey
1 cup sun-dried tomatoes, chopped
1 cup mushrooms, sliced
1 onion, diced
2 cloves garlic, minced
2 cups canned crushed tomatoes
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Parmesan cheese ( optional)
Instructions:
In a large skillet, heat olive oil over medium heat. Add diced onions and cook until translucent.
Add minced garlic and sliced mushrooms to the skillet. Sauté until mushrooms are tender.
Push the vegetables to the side and add ground turkey. Cook until browned and cooked through.
Stir in the chopped sun-dried tomatoes, crushed tomatoes, dried basil, and dried oregano. Season with salt and pepper.
Simmer the sauce for about 10-15 minutes, allowing the flavors to meld together.
In a separate pot, lightly sauté the spiralized zucchini for about 2-3 minutes until just tender.
Toss the zucchini pasta with the turkey and tomato sauce mixture until well combined.
Serve hot, garnished with sun dried tomatoes and parmesan cheese
